Lemon Curd

Makes: 2 cups
Ingredients
1/3 cup lemon juice
3 whole eggs
1 egg yolk
1/2 cup sugar
1/2 cup butter – cut into pieces
1 tsp lemon zest
Directions
Whisk lemon juice, eggs, egg yolk and sugar in a metal bowl until smooth.
Add butter.
Place bowl over a pot of gently simmering water.
Whisk gently until curd thickens – about 8 minutes.
Stir in lemon zest.
Let cool completely
