Scones

Makes: 12-15 scones
Preheat oven to 500F
Ingredients
5 ounces Salted Butter
21 ounces All purpose flour
5 ounces Sugar
1/4 cup Baking Powder
10 ounces Raisins
7 ounces Double cream
4 ounces Milk
2 Eggs, beaten with a pinch of salt
Directions
Rub the butter into the flouir in a mixing bowl. Add sugar and baking powder and mix. Add raisins and mix.
Add the cream and milk and mix until dough comes together. Lightly flour counter and turn out dough.
Roll out the dough and fold in half. Repeat this a few times until you have a rough square of dough, about 1 inch thick.
Brush off any excess flour and cut into squares or cirles. Roll out any scraps to make additional scones.
Place on a baking tray and brush with an egg wash. Wait two minutes and repeat.
Turn the oven down to 400F and bake the scones until golden brown, about 20 minutes.
