Weeknight Mole

2 Shallots
3 cloves garlic
1 pound pork tenderloin
1 tbsp butter
2 chipotle peppers
1 tbsp peanut butter
1 square Mexican chocolate
1 tbsp spice mixture – cumin, coriander, cinnamon, cloves, oregano ground finely
1 tbsp flour
1 tbsp tomato paste
1 tbsp jam
Water

Brown pork all over in a cast iron fry pan
Turn heat to medium low
Add butter, shallots and garlic to the pan and keep moving things around
Once meat is cooked set aside
Add chopped chipotle peppers sauté a bit
Add peanut butter and sauté a bit
Add square of chocolate and sauté a bit
Add spice mixture and sauté a bit
Add flour, sauté
Add tomato paste, sauté a bit
Deglaze pan with a 1/2 cup water
Cook sauce down about 5 minutes
Add 1tbsp jam
