Potato Crust for Quiche

Ingredients

600 g potato

2 eggs

80g cheese

2tbsp parsley

Salt & Pepper

Directions

Preheat oven to 400

Grate Potato. Soak in cold water for 15 minutes. Squeeze out well with towel.

Grate cheese

Mix potato, cheese, eggs, salt and pepper together.

Put in a baking pan, pushing the potato up the sides of the pan.

Bake for 35-40 minutes
